It looks like a concrete element, but yes, it’s edible! I wanted to make a concept with different geometrical figures. The idea was to use simple geometrical figures, straight sharp lines, minimalist style, contrast lighting, one color, without any decor, inedible appearance, but at the same time very gentle and delicious inside. The moulds are modeled by me.
Chocolate sponge cake, streusel with nuts, mousse with chocolate Valrhona Caramelia, ganache with Caramelia and yuzu, jelly with yuzu and passion fruit.

Новый концепт над которым работала весной. Моя идея была создать некий элемент дизайна абсолютно не стандартный, не похожий на обычный десерт. Минимализм, геометрические объекты, работа с формой, четкие линии, контрастный свет, один цвет, никакого декора, минимум объектов в кадре. И в тоже самое время под бархатной поверхностью абсолютно нежное пирожное. Это то, с чем я стремлюсь и буду работать. Моё виденье… Формы авторские. Нарисованы и смоделированы мной, сделаны из силикона.
Состав: шоколадный бисквит, ореховый штройзель, мусс с юзу и Valrhona Caramelia, шоколадный ганаш, желе с юзу, маракуйей и бананом.

I would like to give these as gifts to my son who wants to be a pastry chef. I ordered a mould from Amazon, but found the instructions confusing. It seems there is a lot of layering, but I was wondering if you could do a tutorial on the basics of how to use the moulds to simply it. I am a visual learner, and benefit best from being able to see a process over and over. I thought I was going to bake in them, but it seems that a lot of the creations are from a combination of mousse and prebaked cake and then glazing. Please show a step by step of at least one creation so that I (and other novice bakers) can learn how to use them and can support my son. The creations are amazing, but the process is not easy.
